oystersThe species of oyster we grow is Crassostrea Gigas, the Pacific Oyster. We obtain these as 6mm seed from the hatchery at Seasalter Shellfish Ltd in Kent.

They are grown in a rearing system, which is hung from our processing barge in Poole Harbour. This system has a capacity of 2 million seed. The seed are regularly washed and graded until they reach a size of 5 grams.

We also buy in 'ready to lay' seed at 5 grams from Seasalter Shellfish (Walney) Ltd. to supplement that which we produce in our rearing system.

We lay the 5 gram seed on to the seabed until they have grown to a suitable size for market. Once they reach 80 to 100 grams we use our conveyor harvester to collect them and they are transported in baskets to our barge where we wash and pack them for dispatch.
